I don't know if you guys saw my latest thread with Giselle's pictures at the park, but you'll notice that the sky is super overexposed in, well, ALL of the pictures. I'm not doing anything manually. I just used the Portrait setting so I guess part of the reason is that the aperture or something isn't quite right. If so, I guess I can figure out how to fiddle with the aperture and such, but will the pictures come out more blurry in a manual mode?

I am not sure unless you change your shutter speed to allow less light. I am overwhelmed with my new camera there are way to many options.

The "portrait" setting does that intentionally. Use a different setting.
